 What is Browning

Brown – Typically, when you see instructions to “brown” in a recipe, it refers to cooking food quickly in a very hot pan, on the grill, or other direct heat until all sides turn golden or brown in color. The purpose is to seal in the juices, for a crust, and add flavor though the process of caramelization.
