I like eggs…I mean, I really like eggs. There are few things on the menu I’ll choose over a perfectly cooked egg, especially soft poached, with a deep, golden, farm fresh yolk, teetering just between runny and warm custard.
Like I said…I like eggs.
This is one of the simplest recipes I’ve ever found. A bowl, an egg, a splash of water, a dash of salt…and a microwave.
One-Minute-In-The-Microwave Poached egg.
1 farm fresh egg
2 Tbs. warm water
1/2 teaspoon butter (opt.)
Dash of salt
Put water in a small, microwave-safe bowl. Sprinkle half of your salt into the water. Carefully crack your egg into the water, sprinkle with remaining salt.
Place the bowl, uncovered, in your microwave, and cooking on high for 45-seconds to 1-minute (mine are perfect at 1 minute, but microwaves vary.)
Let the egg cool for a few seconds, then drain off the water, and add butter.
Serve with toast.
