Prawns and Pickled Cucumber Salad (7a)

1 1/4 cups rice vinegar
1/2 cup agave nectar
1/4 tsp red-pepper flakes
2/3 lb peeled jumbo prawns
1 cup sliced red onion
1/2 lb halved and sliced cucumber.
1/4 cup cilantro, chopped
Bring rice vinegar, agave nectar, and red-pepper flakes to a boil. Add shrimp and simmer until cooked through, about 3 min.
Stir in sliced red onion and cucumber.
Serve chilled with cilantro sprigs.
